  • 1/2 cup yogurt
  • 1 tbsp ginger-garlic paste

  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Juice of 1/2 lemon

For rice:

  • 2 cups basmati rice (soaked for 30 minutes)
  • Whole spices (2 bay leaves, 4 cloves, 4 green cardamoms, 1 cinnamon stick)
  • Salt to taste

Other ingredients:

  • 2 large onions (thinly sliced)
  • 1/2 cup chopped coriander and mint leaves
  • 4 tbsp oil or ghee
  • A pinch of saffron soaked in 2 tbsp warm milk (optional)

Cooking Instructions

Step 1: Marinate the Chicken
Mix all marinade ingredients and coat the chicken well. Let it rest for at least 1 hour.

Step 2: Cook the Rice
Boil water with whole spices and salt. Cook the soaked basmati rice until 70% done. Drain and set aside.

Step 3: Fry the Onions
In a large pan, heat oil/ghee and fry sliced onions until golden and crisp. Remove half for garnishing.

Step 4: Cook the Chicken
In the same pan, cook marinated chicken until it’s 80% cooked and the oil separates from the masala.

Step 5: Layer and Cook
Layer half-cooked rice over the chicken. Sprinkle mint, coriander, fried onions, and saffron milk (if using). Cover tightly and cook on low flame for 20–25 minutes (dum method).
